Based at a prominent Midlands based judicial contract in the West Midlands the successful candidate will benefit from working for a leading global food service partner and will be working for a company dedicated to development of its workforce. The successful candidate will be expected to manage the food service delivery at one of the UK’s leading prisons and will be expected to provide high standards of food quality production and customer service. The contract is responsible for delivering up to 1600 meals three times a day during a seven day week operation. You will be joining a team of highly motivated caterers focused on delivering exceptional standards.
The candidate must be flexible as the role itself is to cover holidays and sickness at 3 judicial establishments so must be able to travel at
Support Managers and Chefs in all aspects of food preparation and service, with emphasis on, but not limited to, the following:
·Overall financial accountability ensuring that the kitchen is operated in the most economical way in terms of staff resource, energy usage and minimising food production costs in line with budgeted expectations.
·Adhering to standards of operation as directed by Food Safety and Health and Safety legislation.
·Continued development of dishes and menu cycles for catering operations and encourage the use of fresh ingredients by observing methods of preparation; tasting, viewing colour, texture, and reviewing food production techniques.
·Ensuring that dishes are produced to the agreed standard recipe, maintaining and improving quality standards in line with the set procedures.
·Prepares food as per the established menu establishing nutrition and presentation standards and preparation procedures; measuring results against standards.
·Completes kitchen, operational paperwork and due diligence monitoring in accordance with the established guidelines & procedures.
·Maintain communication and help to forge and maintain a strong team ethic, striving for excellence of service and presentation at all times.
·Always seek to improve the service provided and promote a can do attitude.
·Promote sound attitudes to customer service and where possible improve standards by training and mentoring other employees.
·Controls costs by using approved suppliers; setting standards for quality and quantity in line with the set procedures.
·Maintains a clean and safe environment by following and implementing Company HACCP Standards and instructing others in the safe use of kitchen utensils and operation of equipment.
Maintain and develop a good client relationship.
The successful candidate will require,
City & Guilds 706/1,706/2 or equivalent.
Level 3 Award in Food Safety Supervision for Catering or equivalent.
D32 & D33 NVQ Assessor qualification or equivalent.
Previous management experience in the food services industry is essential.
Previous experience managing a team of chefs in a busy, high volume kitchen environment.
Excellent numeracy skills; strong written and verbal skills.
Knowledge of applicable Health & Safety legislation.
